Capsicum Chinense

By Jim (Habanero) Duffy

These are the species that include all habanero types and the superhots like the Bhut Jolokia and the Trinidad Scorpion. Pods have thinner skin than Annums and come in many variations and sizes. Even though Aji's are mostly Baccatum there are some in the Chinense family. Also not all Chinense are hot. Varieties like the Trinidad Perfume and Nu Mex Suave are mild but aromatic. My opinion is the Chinense are the most flavorful of them all.
